The weather is getting colder and the wind is howling, it’s the perfect time to whip up a great tasty, health sustaining soup. Here’s a great recipe for a hearty soup. Easy and delicious and just what you need after a tough day working outside taking care of trees or removing snow!

Add a great loaf of bread and a delicious dessert and you’re ready to eat.

HEARTY WINTER SOUP

 

1 lb. ground beef
5 c. water
2 c. cubed potatoes
1 c. shredded cabbage
1 c. chopped onions
1 c. sliced celery
1/3 c. uncooked barley
1 1/2 tsp. salt
1/2 tsp. dried basil leaves
1/2 tsp. dried thyme leaves
1/4 tsp. pepper
1 bay leaf
1 (28 oz.) can tomatoes, undrained, cut up
1 (14.5 oz.) can sliced green beans, undrained
1 (9 oz.) pkg. frozen chopped spinach

Brown ground beef in 5 quart saucepan or Dutch oven; drain. Stir in all remaining ingredients except spinach. Bring to a boil. Reduce heat; cover and simmer 30 minutes. Add frozen spinach and cover. Simmer an additional 25 minutes. Stir to blend spinach into soup. Remove bay leaf. Makes 11 (1 1/3 cup) servings.
